Day before Christmas pancakes


These festive pancakes was so easy to make and if you eat with your eyes, like me, I need not say that they were delicious.

You will need:
1 Scoop QNT Delicious Protein
150g egg whites
Touch of caramel essence
Hint of cinnamon

Mix everything well and bake in a heated lightly oiled pan.

Top with homemade apple compote , nuts , berries and a drop of raw honey.

Paleo bread - lactose free/grain free

Hello friends,

I have been reacting worse and worse to wheat - so been experimenting with more wheat free recipes.  This low carb bread is a winner! It's got a good texture with a nutty pallet. 

Ingredients: 

1.5 cups almond flour 
1/4 cups flaxseed flour
1/4 cups coconut flour
5 eggs
1/4 tsp baking soda 
1/4 tsp salt
1 tablespoon apple cider vinegar
4 tablespoon coconut oil

Mix everything well and bake on 200deg for 40-50 minutes. Wait until it's cold before you cut it.

Blueberry pancakes



When I cycle my carbs, I always find it difficult to get my protein and fat intake the same, while still keeping the carbs low.  You all know that too much protein will kick you out of ketosis.  When making pancakes with protein powder and egg whites, the protein tend to go too high and kind of making balancing the meals rest of the day so hard. 
Anyways, Futurelife cereal has a new Zero Sugar version porridge. This makes a hell of a pancake!!! 

You will need:

150g egg whites 
40g futurelife Zero sugar 
100ml milk (lactose free for me) 
100g fresh blueberries 

Mix all these goodies (except berries) very well and pour mixture into a heated pan.  I add about 15ml macadamia oil in the pan, because this counts towards my fat intake for the day.   Scatter half of your berries over the uncooked pancake.  Put a lid on it. Let it cook for about 5minutes.  You will see when it is done.  

What I love most about this is the yummy berry juices everywhere!

Take it out of the pan and add rest of the berries.  I also added fresh vanilla pod. Makes an amazing taste. 
If you use spray and cook instead of oil, you can reduce calories by 120 and fat by 15g

Zerocarb zucchini bread


Good morning my lovelies!

I hope everyone is as excited about this week as I am!  I think this is mostly due to the fact that I get to eat carbs today.  Ha Ha! I have been on low carb for 5 days, so this is a big event for me okay! lol  I am on a delicious carb-high! 

I still have to do a post about what Ketosis is, but I will get there.  Today I want to share a super good low carb, gluten and lactose, grain free bread with you.  The interesting thing about this is, you can have it on low or high carb days.  I had it with a spoonful of almond butter, to keep it low carb.  This morning I had it with maple syrup to up the carbs. 

You will need the following:

100g grated zucchini
200g egg whites
1 whole egg
30g almond butter
1 tablespoon cinnamon
1 teaspoon baking soda
vanilla essence

Mix everything in a blender and pour the runny mixture into a bread pan.  Bake for 15-20 minutes on 200 degrees.  

Makes 2 servings

Fat 11g
Carbs 3g

Better alternative brownies - Delicious recipe!























I had such a craving for a moist brownie on Saturday.  I browsed through some recipes and finally found this one which I modified a bit to suit me.  I really recommend these.  It is all good clean nutrition.

No lactose or gluten.

1 1/4 cups Almond flour
1/2 cup sugar free cocao powder
1 1/2 tsp baking powder
1 1/2 tsp baking soda
3 tbsp QNT Metapure Zerocarb protein powder
1/2 tsp Salt
1/3 cup honey (you could leave this out if you want, because it was really sweet)
1 tsp vanilla
1 cup coconut milk
100g black chocolate
60g chopped nuts

Mix all ingredients very well. Scoop mixture into a oven pan, and top with chopped nuts. Bake at 200degrees for 15-20minutes.  Test with a toothpick

Calories per serving (8 servings) 258
Carbs 14g
Fat  19g
Protien 12g

You could bring the calorie and fat count down alot if you left out the nuts on the top.

QNT Protein Sorbet


Who ever said you cannot have Ice-Cream this summer?

Try this creamy texture sorbet I just made! Use 1 cup of frozen berries with 30g of QNT Metapure Zerocarb protein.




I blended the frozen berries until they were quite broken up and smooth, then added a little bit of water and finally my protein.  I let it run for about a minute.  If you need it to be sweeter, add some stevia, but I was fine with the taste!

You would want to use a blender with a strong motor to do this chopping!  Try some other fruit and let me know how it came out!

Grain free Paleo bread


  • Ladies and gentlemen.. One word for this bread. WOW! It is grain free, lactose free and super yummy! 


     

  • ½ cup Almond butter
  • 2 eggs
  • 2 tablespoons Honey
  • 1 teaspoon Vanilla essence
  • ¼ teaspoon salt
  • ¼ teaspoon baking soda
  • 1 tablespoon cinnamon
Mix everything with the hand blender until the consistency is creamy. Scoop batter into a greased pan and bake for 15 minutes at 200 degrees.

Pumpkin spice muffin with gooey egg

Hello my friends ....

After straying from my Paleo approach for some time, I think it is time to convert and STAY there.  My body is just becoming more and more gluten and lactose intollerant and I think this might be the solution to my problem. 

I have spoken a lot about paleo in the past, but just to recap. This is how Paleo, or else known as 'caveman diet' works. 

Essentially, if it was available thousands of years ago, it's going to have a place in your 

meal plan. This means that your daily diet will primarily consist of meat and fish, plenty of 

fresh fruits and vegetables, as well as nuts and seeds. Oils are typically allowed in 

moderation and foods to be avoided included dairy products, cereal grains, legumes, 

starchy vegetables, fatty meats, and foods that are very high in salt content (such as 

processed meat products and salted nuts).

I came up with this recipe yesterday.  It still contains oats, which is actually not allowed on Paleo, but my body does not react bad to it, so I will still keep the oats for a while. :) Yummy oats! haha!

Pumpkin spice muffin recipe:

1 Cup oats
Half cup coconut flour
130  ml egg whites
10g mixed spice (pumpkin spice)
Vanilla essence
1 teaspoon baking powder
Pinch of salt
50g Almond butter 

Mix everything together well.  This makes 6 muffins. Bake at 190 degrees for 40minutes. 

Calories per serving:  160, 19g Carbs, 6g of fat, 8g of protein.  (1 muffin=1 serving)

Organic chocolate QNT protein bars



Hello Friends! 
I am leaving for my show today! Excited! I made these beauties for when I get back on Sunday.  I will crave something sweet and this is the perfect clean treat to keep me focused on my goals. 


Ingredients:

2 Scoops QNT Casein Protein
2 Scoops Metapure Zerocarb Protein
5 Table spoons raw almond butter
1 Cup almond milk 

Melt 50g of organic black chocolate. 

Mix all ingredients very well.  It would turn into a modelling clay consistency. Shape your protein bars as you wish.  I made 8 100g servings with mine. 

Dip bars into the melted chocolate and set on a tray.  Refrigerate bars.  I think they can last up to a week and half in a air tight container.

Fat 7g
Protein 18g

Duo Peanut Crunch Protein brownies.


Wow.. I cannot WAIT to get these in my mouth?! right?! Check out the 2 tone! Cute right? 

Ingredient list:
1 cup oat flour.( Make this with your food processor)
2 Scoops QNT Delicious protein
Pinch of salt
Pinch of baking soda
4 egg whites
2 Table spoons Stevia (sweetener)
250g Applesauce  (make this by cooking and mashing apples)
100ml water 
2 tablespoons Carob (you can sub with cocoa)

Set oven at 180 degrees.  

Mix all ingredients. Exept the carob.  Scoop half of the batter into your baking pan.  Then mix the rest of the batter with the carob.  Gently spread over the  first layer. 

Pop in the oven and bake for 25-30 minutes.You can test with a toothpick.  

Melt a block of 80% dark chocolate and spread over the brownies.  Add crushed peanuts! 

Calorie breakdown per serving if you have 8 servings: 

210 calories
Carbs 16g
Fat 11g
Protein 11g

Nutty chocolate protein oats

 Hello my friends! 

How have all of you been? So I was at Fibo power this weekend. On the stand of QNT Sports for 4 days! What an amazing experience! 

You can go to my facebook page to catch some pictures.  Anyways, I actually wanted to share this recipe with you.  Goodness! Just what the doctor ordered.  I have been on Keto diet for a week.  Zero carbs.  Already lost 2kg. I decided to add some carbs this morning and will be on keto until show on Saturday.  

To make this yummy Nutty chocolate protein oats, you will need:

120g egg whites
1 scoop QNT SPORT Metapure Zerocarb protein
20g of chopped walnuts
40g of oats 

Mix everything, except nuts, with a little bit of water. Chuck in microwave and stir frequently.  You will see when everything starts to thinken.  Cover oats with  nuts.  Optional: I added a drizzle of Walden farms zero calorie caramel sauce.

Oats cookies

Hello Friends -

I know I talk a lot... lol.. too  much. :)  Hope you missed my absence? Most of you following me would know I have been in hospital for my wisdom teeth. All 4 off them, and it was hellish. No jokes.  I am heavily sedated as I am typing this post. Hurts like hell.

So..  I have been in bed 3 days and soooooo bored!!! I want to share this cookie recipe I made just before my show. And YES, I ate all of them last week. he he he... I knew this teeth operation will sort any unwanted water retention. And so it did... dropped 3kgs already. Eating nothing but Apple compot and ice-cream. Not at all as gorgeous as it sounds... grrrr

Focus:  RECIPE:

3/4 cup of butter
1/2 cup of wholegrain flour
2 and 1/2 cups of oats
1/2 cups brown cane sugar
pinch cinnamon
pinch salt
Tsp baking soda
1 egg

Additional:
1 TBSP Peanut butter
1/2 cup almond flakes
1 TBSP Honey

Mix it all up. Bake for 15-20 minutes at 200 deg.

Voila!!!

High protein - Sweet breakfast pancakes

 Hello Friends,

How are all of you?

I want to share this versatile pancake recipe with you!  I was amazed at how good it tasted. lol.... Weird when you are amazed if your food taste good?  Haha!



Ingredients:

1 banana
4 egg whites
The batter should look something like this! 
1 Scoop Whey Protein powder (vanilla would be a good choice)

Optional:

1 Teaspoon of Flax seed
a Pinch of cinnamon
drop op almond essence

These are optional, but they do give a great taste to your pancake!

Put everything in the blender and whizz it up! Make sure your flax seed is broken up, otherwise you don't really get benefit from them.  You should get 3 pancakes out of the mix.  I did mine in the non-stick pan.  They go fast! so low heat! Roundabout 1-2min on  a side.  Might be less, depending on your heat.

Protein : 50g
Carbs: 20g
Fat: Basically nothing.

Red Velvet Cupcakes

Hello Friends,
Please do not by any means mistake this for something healthy.  This is just normal , but very delicious cupcakes! Enjoy it! :)

  • Ingredients:
  • Cake
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 1/2 cups canola oil
  • 1 cup plain yogurt
  • 2 tablespoons red food colouring
  • 1 teaspoon vinegar
  • 1 teaspoon vanilla extract
  • 2 1/2 cups flour





















  • 1tablespoon cocoa
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • Icing
  • 2 cups mascarpone
  • 1 cup icing sugar (confectioners'), sifted
  • 1/2 cup  cream
  • Zest of 1 lemon
DIRECTIONS

For the cake: Preheat the oven to 350 degrees F.

In a food processor, mix the sugar with the eggs, oil, yogurt, food coloring, vinegar, and vanilla. Add flour, cocoa, baking soda, and salt. Blend until just incorporated.

Place paper cupcake liners into a muffin pan, and divide the batter evenly among the cupcake liners, pouring only halfway so the batter doesn't overflow. Bake, rotating halfway through, for 25 to 30 minutes. Remove the cupcakes and let cool.

For the icing: In a bowl, beat the mascarpone, icing sugar, cream, and lemon zest together until the mixture is smooth.

Spoon a dollop  of mascarpone cream on the cupcakes.

Frozen yogurt treat

Hello, 


Here is a quick low calorie and almost fat free frozen yogurt recipe. 

You need :
1 serving of fat free natural yogurt
1 sachet of stevia
a Handful of frozen fruit of choice. I used strawberries. 

Unfortunately you need equipment with a strong blade to whizz the fruit. I broke my blade... oops. 
Work fast, so the fruit does not melt. Add the yogurt and stevia and blend well.!

That's it! So easy! Enjoy....

Cinnamon roll - Lactose and gluten free

I saw this recipe on the web and decided to give it a go, since I love cinnamon and spice (and all things nice). This is one serving.

It was really a treat, and would advise anyone to try this!

Ingredients:
3 tablespoons coconut flour
1/2 tsp baking soda
Pinch of salt
Tsp cinnamon
Pinch nutmeg
Tsp vanilla essence
1 egg
2 Tablespoons almond milk
1 Tablespoon Macadamia oil ( olive or coconut oil will do the same)
1 Table spoon Maple syrup

Dried fruit of choice.

Oven 200 deg, bake 25 minutes

Mix flour, baking soda, salt, cinnamon and nutmeg.

Add vanilla, egg, almond milk oil, and maple syrup.   Mix well and let it rest for a few minutes.  This is just so the coconut flour can absorb all the liquid.

Spread dough on a baking sheet, make a rectangle.  Cover with dried fruit, and roll it (as picture above)

Bake until golden brown! Enjoy!!!
